Unimaginable Seafood Lasagna

5 T butter
1 lb langistinos or monkfish, chopped coarsely
8 oz shrimp, coarsely chopped
8 oz crabmeat, cleaned and picked of cartlidge
3 cups button mushrooms
3 T flour
2 1/2 cups milk, heated
1 1/4 cup heavy cream, heated
1 (14 oz) can chopped tomatoes
2 T fresh basil, chopped
8 sheets no cook lasagna noodles
1 C fresh Parmesan cheese
Salt and Pepper to taste


Melt 1 T butter and saute monkfish/langostinos, shrimp (not crabmeat) til cooked through. Approx. 3 minutes. Put in bowl. Add mushrooms to pan and saute til tender. Add to fish in bowl. Add crabmeat to bowl with fish and mushrooms.

In pan melt remaining butter and flour and make a roux. Add heated milk whisking constantly until thickened. Simmer for 3 to 4 minutes. (this simmering the thickened sauce gets rid of the flour taste). Add heated cream and cook for an additional 2 to 4 minutes more. Add to fish mixture and mix well. Season to taste.

Preheat oven to 375.

Layer in greased baking dish as follows:
1/2 tomatoes on bottom
1/2 basil
season with salt and pepper
1/3 of seafood sauce
Cover with 4 sheets lasagna noodles
rest of tomatoes
rest of basil
season again with salt and pepper
1/2 of remaining sauce
4 lasagna noodles
rest of sauce
cover with cheese

Bake 30 to 40 minutes until golden brown and bubbly. Garnish with more chopped basil and chopped tomatoes if desired. Let rest 10 minutes before cutting.
