Crab: Angry Crab

Angry Crab

2 cooked Dungeness crabs (2 lb. Each)
5 Tbl. sliced garlic
5 Tbl. Serrano chiles
4 Tbl. orange zest
2 cups basil
4 oz. olive oil
2 cups Wondra flour
1 Tbl. chili powder
Salt and pepper to taste


Purchase pre-cooked whole crabs from your favorite seafood counter. Remove carapace (main shell) and lungs from the crab. Separate the legs from the body. Cut the body into 4 pieces and crack the legs over a towel to catch the juices.

Mix Wondra flour, chili powder and salt and pepper to taste. Gently toss the crab in and coat with flour mix.

Heat olive oil in a large saute pan. Once it gets very hot, add crab and cook until crab turns brown. You should only need to turn the crab pieces one time. Lower heat and add sliced garlic. When the garlic turns brown, add the basil. Add Serrano chiles and orange zest. Serves 2.
