Crab Cakes with Remoulade Sauce
1 lb. lump crabmeat
1-2 eggs
1/4 cup real mayo
1 tsp. Luizzane cerole Mustard
1/4 cup minced red pepper
1/4 cup minced green onion (about 3)
1-2 tsp. fresh lemon juice
Old Bay Seasoning to taste
Combine and mix well, all ingredients except the crabment. Carefully fold in the crab. Form into small patties and grill on griddle on each side unitl lightly brown. Serve on top of a water cracker. Remoulade Sauce on top or side.
Remoulade Sauce:
1 1/3 cups olive oil
1/2 cup cider vinegar
1/4 cup Dijon mustard
1/2 cup catsup
4 TBSP. horseradish
4 gloves of garlic
1 tsp. Tabasco sauce
1/4 cup green onions
Salt and pepper to taste
Put all ingredients into blend a blend until pureed. Serve on top of crabmeat or on the side.
