Crab: Crab Quiche

Crab Quiche
from "Cooking with the Skins

1 cup white crab meat
1 cup grated Swiss cheese
5 large eggs
1-1/2 cups milk or half & half
1/2 cup sliced mushrooms
1 8" unbaked pie shell
salt and pepper to taste


Saute mushrooms. Sprinkle cheese into pie shell. Beat eggs with milk and seasonings, pour over cheese. Sprinkle crab and mushrooms over pie. Bake at 370 degrees for 35 min. or until firm in the middle.
