Crab Fritters

1/2 lb. fresh crabmeat
1 cup biscuit mix
3/4 tsp salt
1/8 tsp garlic powder
1/2 tsp ground red pepper
1 T chopped fresh parsley
1/2 tsp grated lemon rind
1/4 cup milk
1 large egg
2 T fresh lemon juice
1/4 tsp Worcestershire sauce
veggie oil
creole sauce


Drain and flake crabmeat, removing bits of shell.

Stir together biscuit mix and next 5 ingredients; make a well in center of mixture. Combine milk and next 3 ingredients; add to dry ingredients, stirring just until moistened. Add crabmeat.

Pour veggie oil to a depth of 2 inches in a dutch oven; and heat to 375 degrees. Drop batter by teaspoons full into hot oil an fry a few at a time 30 seconds or until golden brown turning once. Serve with creole sauce.

Creole Sauce:
1/2 cup creole mustard
1/4 cup mayo
1 tsp lemon juice
1/2 tsp hot sauce
1/4 tsp pepper


STir together all ingredients.
