Deviled Crab Stuffing

For Fish and Mushrooms
Deviled Crab Stuffing

2 ounces (1/2 stick butter)
3 shallots chopped fine
1 clove finely chopped garlic
1 jar chopped pimento, drained
2 large mushrooms, chopped fine
6 ounces lump crab meat
1/2 to 1 cup Ritz cracker crumbs

In a saute pan heat butter and gently saute shallots, garlic and mushrooms until shallots are transparent. Remove from heat. Gently fold in crab and bind mixture with cracker crumbs. You don't want it too dry though Make sure it holds together and yet is moist.

After you stuff or do what you want with this, bake at 450 degrees for approx. 6 to 8 minutes.

If you go the deviled crab route, broil until lightly browned.
