Okra Fish Creole

1 lb. mild white fish fillets
1/2 cup celery, sliced
1/2 cup okra, sliced
1/2 cup green pepper, sliced
1/2 cup onion, sliced
1 8 oz. can tomato sauce
1/2 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. oregano
1/4 tsp. thyme
2 cups rice, cooked

Bake fish, covered, at 350 for about 10 minutes - do not overcook.

While fish bakes, combine vegetables, tomato sauce and chili powder in a saucepan and simmer for 10 minutes. A little water may be added if necessary.

Flake fish with a fork and add to vegetable mixture. Add herbs, then return to heat and bring to a simmer.

Remove from heat and serve over rice.

Serves 4.
