Potato Crusted Fish Fillets
From Merryman's Restaurant on Moonstone Beach

2 - 3 cups dehydrated potato flakes
1 cup buttermilk or 1 egg white slightly beaten
desired amount fish fillets
butter or oil for frying
Lemon wedges, if desired


Dip fillets in milk (or egg wash) and coat with the dry potato flakes. Fry in hot oil or butter until fish flakes easily, about 3 minutes per side. Plate portion and add lemon wedge.
