Fish: Quenelles Recipes

Quenelles

250 grams fish fillets, (sole, or similar white fleshed fish)
1 egg
1 yolk
salt, pepper, parsley
2 Tablespoons cream
1 slice of white bread


Cut the fillets and put in a bowl with the egg, salt and pepper. Cool in the fridge.

Take the outer rind of the bread slice and put it in the cream. Then process bread, parlsey and the rest of the ingredients. Cool again, because it will warm during the processing. Than form the quenelles with a tablespoon and slide them carefully into water that is just simmering. Let cook about 10 minutes, take out with a strainer and serve. Serves 4.



This one is specially fine to serve alone with the shrimp sauce.
500 grams fish as above
250 grams butter
250 grams pastry cream as below
1 egg, beaten
Salt, pepper, Nutmeg


Process and cool well. Then form the quenelles with a spoon and slide into water just simmering for about 15 minutes. Take out with a strainer, cover with sauce and serve.


Pastry Cream:
1/2 liter milk
1 vanilla bean or some drops extract
1 teaspoon sugar (or more to taste)
3 egg yolks mixed with 2 tablespoons cornstarch.


Mix everything well and simmer, stirring, until it thickens
