From "Clipped Wings Cuisine", 1979
2 lb fillet of flounder
3/4 c dry white wine
Juice of 1 lemon
1 small onion, cut fine
1 c sliced mushrooms
1 t finely cut parsley
1/2 t salt
2 c medium cream sauce
4-8 whole broiled mushrooms
Dip fillets in slightly salted water. Drain and wipe dry on paper towels. Place fish in buttered shallow baking dish. Pour wine, lemon juice, onions, mushrooms, parsley, and salt over fish. Bake at 325 degrees for 20 minutes.
While fish bakes, prepare your favorite cream sauce. Spread sauce over fish, add whole mushrooms. Brown under moderate broiler 3-5 minutes. Serve at once in baking dish.
