Baked Mahi-Mahi Italian

2 to 3 tomatoes, peeled -- thinly sliced
1 cup Italian seasoned dry bread crumbs
2 large mahi-mahi fillets
salt and pepper
Wine Sauce
1/2 cup freshly grated Parmesan cheese

Wine Sauce:
1/2 cup white wine
1/2 stick butter
2 teaspoons fresh lime juice

For fish: Preheat oven to 450 degrees. Arrange tomato slices in a single layer on bottom of an 11x7" glass baking dish. Sprinkle crumbs on fish and season with salt and pepper. Arrange fillets on tomatoes. Cover with Wine Sauce and sprinkle with Parmesan cheese. Bake 12-18 min. Do no over bake. Fish is done when flakes easily. Parmesan will form a nice crust on top.

Wine Sauce: Bring wine, butter and juice to a boil in a saucepan over low heat. Increase heat to med. Boil 3 min. Pour over fish.

NOTES : Recipe may be doubled or tripled. Allow one fillet per person.
