Mahimahi with Macadamia Nut Crust
1 (10 oz) mahimahi fillet (1" thick) skinned and halved crosswise
1/2 cup fresh lime
1/3 cup panko (Japanese breadcrumbs)
1/4 cup chopped macadamia nuts
1 tsp chopped fresh cilantro
1/8 tsp salt
4 tbs melted butter, divided
Place fish in dish. Pour juice over and marinate 1 hour, turning occasionally.
Preheat oven to 350. Combine panko and next 3 ingreds in a small bowl. Mix in 2 TBs butter and season generously with pepper.
Pour remaining butter into shallow baking dish. Remove fish from marinade and place in baking dish, turning to coat with butter. Spoon panko mixture atop fish, dividing evenly. Press top gently to adhere.
Bake until fish is cooked, about 20 minutes. You may want to brown top under the broiler.
Serves 2.
