Mahi Mahi with Banana and Cilantro

Mahimahi with Banana and Cilantro

1 1/2 pounds mahi mahi fillet, cut into 4 equal pieces
1 large banana, cut into 1/4 inch slices
1 cup thinly sliced onions
1 tablespoon chopped fresh cilantro or 1 teas. dried parsley flakes


Place each fillet in the center of a large sheet of aluminum foil. Place banana slices on top of fillets, mound onions on top of bananas and sprinkle with cilantro or parsley. Wrap foil to enclose fish.

Place wrapped fish, top down, directly on hot coals of a barbecue grill or in a 500 degree F. oven for 6 to 8 minutes.

Serve fillets on a platter, garnished with cilantro sprigs.

Makes 4 servings of 190 calories per serving
