Mussels Marinara

Amount Measure Ingredient -- Preparation Method

2 Tablespoons olive oil
2 onion -- thinly sliced
2 cloves garlic -- minced
2 (28 oz) cans tomatoes -- chopped
6 ounces tomato paste
2 teaspoons basil
2 tablespoons oregano
1/8 teaspoon red pepper flakes
1/2 teaspoon fresh ground black pepper
3 pounds mussels -- cleaned and debearded
1 cup dry white wine
water to steam mussels

Saute onion and garlic in olive oil. Add tomatoes, tomato paste, basil, oregano and red pepper flakes. Simmer 25 minutes.

Meanwhile, steam mussels in 2 c water with couple of pepper corns, t salt. Remove and save liqueur.
Add 1 c wine and 1 c liqueur to tomato sauce. Simmer 15 minutes. Add mussels and heat until they are hot.

Serve over linguine.
