Orange Roughy

1 fillet for person, at least
1/2 onion, chopped
2 red peppers, chopped
4 T. olive oil, divided
2 cups water


Saute the chopped onion and red peppers in 2 T. of olive oil. Add 2 cups of water and blend. Cook this mixture down for about 10-15 minutes.

Roll the orange roughy fillets and secure with toothpicks. Brown the fish in 2 T. oil.

Bake in a 450* F. oven for 4 minutes. Serve each rolled fillet with the red pepper sauce over it.
