Fried Oyster Salad with Bacon Vinagarette Dressing

1/2 lb mixed greens (use spring mix if available)
6-8 oysters per person
3 eggs hard boiled and chopped
1/2 cup bacon fried
2 red peppers roasted, peeled and julienne
Seasoned flour with salt and pepper (to fry oysters)

Bacon Vinagarette Dressing:
2 egg yolks
2 TBSP. Dark brown sugar
3/4 c. Balsamic vinegar
2 c. Peanut oil
1/4 cp bacon cooked and crumbled
salt and pepper to taste

Put yolks in a food processor or blender. Add the brown sugar. Slowly add 1/4 cup of balsamic vinegar. Drizzle the peanut oil in as you would if you were making mayo. As the mixture begins to stiffen, add the remainder of balsamic vinegar and bacon, Salt and pepper to taste.

Place a small amount of dressing in the bottom of each salad plate before adding the mixed greens. Arrange lettuce, eggs, bacon and pepper on plate topping with oysters. Drizzle dressing over salad.
