Oysters and Salsa of Mixed Peppers
Recipe by Stephanie Alexander

1/2 cup finely diced red pepper
1/2 cup finely diced yellow pepper
1 small fresh chilli, seeded and finely chopped
1/3 cup red wine or cider vinegar
1 handful fresh coriander leaves, finely chopped
2 tbls. very finely chopped shallot or mild red onion
Juice of 1 lime or 1/2 lemon
1/4 cup extra virgin olive oil


Mix ingredients together and allow to mellow for 30 minutes. This quantity is sufficient for 24 oysters.
