Baked and Stuffed Salmon
4 large fresh tomatoes, diced (homegrown if possible)
2 large onions, chopped
1/4 pound (1 stick) butter
Juice of 1 lemon
a whole 9 pound (+ or-) cleaned salmon
Mix tomatoes and onions in the melted butter, lemon juice and a bit of dill. This is your stuffing. Amounts of stuffing adjusted to the size of your fish. Fill the fish cavity loosely with stuffing, any remaining can be spooned over the top.
Bake in 350 oven for at least 1/2 hour, or until fish flakes off easily with a fork.
