Baked Salmon with Roasted Pecan Crust
- 4 servings

1/2 tsp vegetable oil
1 1/2 lbs salmon fillet
pepper, freshly ground
1 1/2 cups pecans, chopped
2 1/2 tbsps butter, melted
1 tbsp fresh lemon juice
1 tsp Worchestershire sauce

Preheat the oven to 350 degrees (don't turn heat up much higher than 375 or the pecans will burn). Grease a medium roasting pan or large oven proof skillet with the oil. Place the salmon fillet in the pan, skin side down, and sprinkle with the salt and pepper.

In a small bowl mix the pecans, melted butter, lemon juice, and Worcestershire sauce. Spread the nut topping on the salmon. Place on the middle shelf of the oven and bake for about 20-30 minutes, or until cooked through.
