Salmon Cakes

6 oz. cooked salmon, crumbled
1/2 cup cracker crumbs
2 Tbs. mayonnaise
2 Tbs. grated onion
1 egg, beaten
1/4 cup milk
2 Tbs. minced, fresh parsley
Salt and freshly ground pepper
dill weed (optional)

Place all ingredients in bowl and mix lightly. If it seems too dry, add a little more milk or if too wet add more crumbs. Shape into cakes. Pan fry in a little oil until brown on both sides.

Serves 2
