Chilled Salmon

Chilled Salmon
serves 6

3 lbs middle cut salmon
Few springs parsley
olive oil for frying
lemon juice

Wash and dry salmon and cut into 6 pieces.

Heat oil in deep pan and cook salmon until golden brown and cooked right through, about 12 minutes for each slice. Drain on greaseproof paper and allow to cool. Serve cold, brushed with lemon juice, and garnished with the parsley.
