Grecian Salmon Salad 
1/2 pound cooked salmon (If using canned salmon drain liquid from the can and reserve). 
1 tomato sliced 
1 cucumber sliced 
2 ounces feta cheese, in small pieces 
Ripe olives - your choice of quantity 
1/2 of a mild onion sliced thin (vadallia, red) 
Washed and crisped lettuce - green leaf, head, romaine 
1/4 cup sliced green onion (sprinkled on the top) 
Herb Dressing: 
(If you have liquid from the can, pour it into measuring cup and add olive oil to equal 1/2 cup total. 
If no reserved liquid, use olive oil alone. 
1/2 cup Olive oil 
14 cup wine vinegar (regular will work) 
1/4 teas. salt 
1/4 teas. crushed oregano 
1/4 teas. basil leaves 
1/8 teas. black pepper 
Prepare herb dressing and set aside. Combine salad ingredients, toss with dressing and enjoy!
