Grilled Oregon Salmon
1/2 cup soy sauce
2 crushed garlic cloves
1/2 cup sherry
1/4 cup Marionberry or blackberry jam
Fresh rosemary sprigs, if available
Combine the soy sauce, garlic, sherry, and jam in a plastic bag and mix well. Marinate salmon steaks in the sauce no more than 30 minutes. Refrigerate while marinating.
Grill salmon on aluminum foil over coals just until finished. Baste with marinating sauce while grilling. Place a rosemary bough on the grill for added taste.
