Herb-Marinated Salmon in Chardonnay
Six - 6 oz. fillets of Salmon
Marinade:
1/8 cup olive oil
1/4 cup Chardonnay
Juice of one lemon
2 Tb Dijon mustard
2 cloves garlic, mashed
3 Tb fresh Italian parsley, chopped
2 Tb fresh basil, chopped
2 Tb fresh cilantro, chopped
2 Tb capers, chopped
Salt & white pepper to taste
Plain bread crumbs
Mix all ingredients together. Marinate salmon fillets for 1 hour, drain and reserve liquid. Lightly bread fillets and saute in clarified butter until lightly browned. Remove to warm platter. Add marinade to pan and reduce by half, pour over salmon.
