 Salmon Jerky

 In The Frugal Gourmet Cooks American, Jeff Smith

 Stretch thin strips of salmon (sliced from a fillet) and place them on a 
rack in the oven (oven needs to have a pilot light) Wait around 12 hours 
and you will have jerky.

  Use a cookie  rack on a cookie sheet to put the salmon strips on) This 
is a good thing to do at night when you are sleeping and your oven is not
needed for other tasks.
