Marlen’s Spaghetti Casserole

1/2 pound spaghetti, cooked and cut in 1" pieces
4 Tablespoons butter or margarine, melted
4 Tablespoons all purpose flour
2 cups milk (2% ok)
1 8 oz. cream cheese at room temperature
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 small can tuna or salmon (boneless and skinless)
Parmesan or shredded mozzarella cheese


Preheat oven 375* F. Set cooked spaghetti aside.

Mix butter, flour and milk well. Place in medium saucepan at medium heat and stir constantly until it thickens and becomes creamy. Take off heat. Mix cream cheese, salt and pepper. Add the warm cream mixture little by little until all is well incorporated. Add cooked spaghettis and mix well.

Place in buttered casserole or buttered individual casseroles. Top with either Parmesan cheese or shredded mozzarella. Bake about 20 minutes for the individual casseroles, about 30 minutes for the large casserole, until heated through and the cheese is melted and browned.

Yield: 6 portions. Freezes well.
