1 can pink salmon
1 small onion chopped and pinch of parsley flakes
3 cups mashed potatoes (real or instant)
top and bottom pie crust
salt and pepper to taste
In a sauce pan place salmon and juice--add water to top of salmon, onion, salt, pepper and parsley.
Bring to a boil and simmer for 10 minutes. Drain the salmon and place back into pan. Add potatoes and mix. Place mixture into pie crust and put top crust on. Brush with milk.
Bake at 350 degrees until crust is browned.
This pie can also be frozen for a few months.
