Salmon with Island Jewels
1/4 cup chopped red onions
1/4 cup scallion pieces
1/2 cup diced fresh mangoes
1/2 cup diced fresh pineapple
1 tablespoon chopped pimientos
1/2 cup cooked black beans
Sauce:
1 cup chopped fresh pineapple
1 tablespoon lime juice
1 tablespoon olive oil
4 salmon steaks (about 1 1/4 pounds)
In a bowl, combine onions, scallions, mangoes, diced pineapple, pimientos and black beans.
In a blender, combine chopped pineapple, lime juice and oil and puree for 1 minute.
Coat a shallow baking dish with vegetable cooking spray. Arrange steaks in the baking dish and spoon vegetable/fruit mixture over fish.
Then pour pineapple/lime juice mixture over all and bake in a 350 degree F. oven for 15 to 17 minutes.
