Sesame-Crusted Atlantic Salmon with Ginger Sweet-and-Sour Sauce

3 tablespoons fresh ginger
2 tablespoons olive oil (divided)
1 tablespoon minced shallot
1 tablespoon minced garlic
1/4 cup sugar
1/4 cup red wine vinegar
3 tablespoons soy sauce
Salt and pepper to taste
4 salmon fillets (4 ounces each)
1/4 cup sesame seeds
Fresh parsley


Saute ginger in 1 tablespoon oil until light brown, add shallot and garlic, cook until soft. Add sugar, cooking until sugar is light brown in color. Add vinegar. Cook until sauce is thickened and coats back of spoon. Add soy sauce and adjust salt and pepper to taste.

While sauce is reducing, dip salmon fillets into sesame seeds and saute in hot non-stick pan with remaining 1 tablespoon oil until nice crust forms, 2 to 3 minutes per side. Salmon is cooked when flesh turns opaque and surface flakes slightly when touched. Hold in warm place until serving. Do not overcook as salmon continues to cook for a time after it is removed from heat source.

Top fillets with sauce and garnish with parsley.
