Salmon: Smoked Salmon Special

Smoked Salmon Special
Serves 4

8 slices Wholemeal bread
125g tub Philadelphia cheese
4 good slices smoked salmon
6 - 8 slices streaky bacon
1 red onion, sliced
1/2 lemon
2 tsp mango chutney
freshly ground black pepper


Cook the bacon until crisp (the best way is to fry in plenty of lard - highly unfashionable, but dry it well on kitchen towel to remove as much fat as possible) and leave to cool. Spread the cheese thickly, dividing it between 4 slices of bread. Cover with the smoked salmon and then dab the salmon with the chutney.

Split the onion slices into rings and put a few on each sandwich (you will have onion left over). Give each sandwich a good few twists of black pepper and a squeeze of lemon. Crumble the bacon and scatter over the 4 slices. Put on the other slices, serve and enjoy.

Comment: Yes, this is an unusual combination and yes, of course it works. For variation use Ricotta or other cream cheese, some of the flavoured Philly cheeses, or make your own herby cheese (with tarragon, dill, parsley or whatever). This is also good on rye bread.
