Smoked Salmon and Chevre Quiche 
from the Stuffed Cougar Cookbook 
1 (9") pie shell 
4 oz. Chevre with garlic and herbs (goats milk cheese) 
1/2 cup heavy whipping cream 
4 eggs 
3-4 oz. Smoked salmon, shredded 
1/4-1/2 cup fresh chopped basil 
Bake pie shell as directed for 5 minutes. Beat cheese and cream with electric mixer until smooth, beat in eggs, one at a time. Fold in salmon and basil. Pour into pie shell and bake at 375 for 30-35 minutes. Serves 6. 
NOTE: Rondele cheese spread may be a substitute for Chevre.
