Salmon Steaks and Black Bean Salsa

4 fresh salmon steaks
1 teasp rock salt
3 cloves garlic
1.5 inch ginger, peeled and grated
2 limes, grate zest (reserve juice to use in salsa)
big pinch cinnamon
big pinh of coriander
half a bunch of fresh coriander, finely chopped
1 tabsp olive oil
freshly ground black pepper


Wipe steaks with paper towel.

In a mortar crush garlic and rock salt. Add ginger and spices. Add oil and pepper, mix. Spread onto fish, cover and refrigerate for 2 hours.

Place on hot grill for 3.5 minutes each side.

Salsa:
110g black beans, soaked overnight
1 chili, finely chopped
3 oz of fresh coriander, finely chopped
350g tomatoes, seeded, skinned and finely chopped
3 spring onions, finely chopped
1 tabsp olive oil
reserved juice of limes
half teasp salt


After soaking overnight rinse beans.

Boil steadily for 10 mins, reduce heat and simmer for 30 mins or until cooked. Drain and cool completely. Add other ingredients to beans and mix gently. Serve with fish.
