Salmon: Stovetop Salmon Noodle Casserole

Stovetop Salmon Noodle Casserole
Preparation Time: 10 minutes
Cooking Time: 15 minutes

1 can (7.5 oz/213 g) salmon
1/2 cup (125 mL) salmon broth plus milk
3 cups (750 mL) dry medium egg noodles
2 carrots, thinly sliced
1 cup (250 mL) frozen peas
1 can (10 oz/284 mL) Campbell's condensed Cream of Celery soup
Pepper
1 cup (250 mL) shredded Cheddar cheese


Drain salmon, reserving broth. To broth, add enough milk to make 1/2 cup (125 mL). Break salmon into chunks. Set aside.

Cook noodles according to package directions. Add carrots and peas for last 5 minutes of cooking time. Drain.

In same saucepan, combine soup, milk, pepper and cheese. Bring to boil. Add noodles, vegetables and salmon. Over medium heat, heat through. Garnish with parsley, if desired. Makes 4 servings.

Variations: Tuna Noodle Skillet: Prepare as directed above, except substitute 1 can (7 oz/198 g) tuna, drained and broken into chunks, for the salmon.
