Whole Salmon
3 - 4 lb. whole salmon
1 onion, sliced into rings
1 green pepper sliced into rings
2 tomatoes sliced
1 lemon, sliced
3 strips of bacon
1 lemon, quartered
Rinse and dry salmon and place on a large peice of foil. Layer vegetables and lemon slices in the cavity and on top
of the fish. Lay bacon over the top.
Fold foil over salmon and poke a hole in the top for steam to exit.
Place in an open roasting pan and bake at 375
deg. for 1 hour (add an extra 15 to 20 min. if the salmon is partially frozen.
