Scallops: Pan Fried Scallops

Pan Fried Scallops

15 medium scallops with roe, cleaned
Olive oil
1 Tblsp butter
salt and black pepper
1 lemon

Wash and pat dry the scallops. Heat a griddle pan and brush with a little oil. When smoking add the scallops, season with a little salt and pepper and cook for 2 minutes on one side. Cook for a further two minutes, shaking the pan constantly. Squeeze in the juice of the lemon and butter. Serve
