Smoked Sea Scallops with Chili-Lime-Cilantro Cream Sauce

Amount Measure Ingredient, Preparation Method
1 pound sea scallops
Juice of 1 lime
1 teaspoon finely minced lime rind
1 teaspoon ground hot chili pepper
3/4 teaspoon salt

Lime-Cilantro Cream Sauce:
1 cup plain yogurt or light sour cream
1 large green chili (such as poblano or Anaheim) roasted, peeled and diced
1/4 cup coarsely chopped cilantro
1 tablespoon fresh lime juice
1 teaspoon minced lime rind

For Sauce: Combine sauce ingredients and refrigerate until ready to use.

Prepare smoker as directed by manufacturer, using wood of your choice.

In large bowl, toss scallops with lime juice, rind, ground chili and salt.

Smoke scallops until cooked through (about 1 hr.)

Serve with cream sauce and garnish with additional lime rind.
