Sea Scallops with Garlic and Tomato

2 Pounds sea scallops
1/4 Cup milk
Salt and pepper to taste
1/2 Cup flour
1 Tablespoon olive oil
2 C canned tomatoes
Salt and pepper to taste
4 Tablespoons vegetable oil
4 Tablespoons butter
1 Tablespoon parsley, minced
1 Tablespoon garlic, minced

Place scallops in bowl. Add milk, salt and pepper, set aside.

Put flour in flat dish and set aside.

Heat 1 tbl. olive oil in saucepan. Add tomatoes, salt and pepper. Bring to boil and cook for 5 minutes or until moisture has evaporated. Stir in basil and remove from heat.

Heat 4 Tbs oil in skillet large enough to hold scallops in one layer.

Drain scallops and dredge in flour. Fry over medium heat until browned. Remove and add to tomato sauce. Add butter to pan and cook until it starts to brown. Stir in garlic and quickly pour over scallops. Sprinkle with parsley.
