1 1/2 lbs. of Med. shrimp, peeled and deveined
2 large tomatotes, diced
1 green pepper, julienne
8 mushrooms, sliced
2 TSBP. fresh garlic, minced
1 meduim zucchini, julienne
2 tsp. olive oil
Salt & Pepper to taste
4 oz. Feta cheese, crumbled and drained
1 c. heavy whipping cream
1 tsp. water
1/2 lb. of fresh fettuccini
2 TSBP. butter
Peel shrimp. Sliced vegetables. Simmer heavy cream until reduced to 2/3 cup or slightly thickened. Do not let cream boil. Season with salt and pepper. Remove and set aside.
Heat olive oil and and garlic. Add shrimp and veggies and cook lightly until shrimp turns a pink color and vegetables are hot. Drain and set aside.
Cook pasta until al dente'. Drain and toss with butter, cream and Feta. Mix together with shrimp and vegetables. Serve immediaatley. serves4.
