Baked Stuffed Shrimp

1 lb. jumbo 16/20 shrimp, thawed, butterflied, and rinsed
1 egg, beaten
6 oz. lump crabmeat
2 Tbl. heavy cream
1/2 tsp. dry mustard
1/2 tsp. salt
6 Tbl. butter
salt & pepper
1/4 cup finely chopped red pepper
1/4 cup fresh bread crumbs


Preheat oven to 400 degrees.

Combine egg, crabmeat, cream, mustard, and salt in a large bowl.

Melt butter in a skillet over low heat. Remove from heat, dredge shrimp in butter, then arrange shrimp in a baking dish. Season shrimp lightly with salt and pepper.

Return skillet to medium heat. When butter is sizzling, saute red pepper for 2 minutes. Add bread crumbs and saute for 1 more minute.

Pour contents of skillet into bowl with crabmeat mixture. Blend thoroughly.

Spoon 1 tablespoon of stuffing over each shrimp. Bake for 20 minutes.
