Broiled Shrimp with Soy-Citrus Marinade
(Serves 4)

2 pounds large raw shrimp, shelled and deveined

Soy-Citrus Marinade:
1/3 cup freshly squeezed orange juice
2 tablespoons fresh lemon juice
2 tablespoons low-sodium soy sauce
1-2 tablespoons finely minced fresh ginger
1 tablespoon grated orange zest
1 1/2 teaspoons canola oil
3 cloves garlic, crushed
Freshly ground black pepper
Orange slices for garnish


Place shrimp in a rectangular glass baking dish.

In a small bowl, combine marinade ingredients. Pour mixture over shrimp, stirring to coat. Cover and marinate in refrigerator for 8 hours or overnight, turning occasionally.

Preheat broiler, setting rack 6 inches from heat source; or prepare a fire in a grill.

Drain shrimp, reserving marinade. Thread on skewers and broil or grill for 2-5 minutes total time, turning once. Baste occasionally with marinade.

To serve, arrange shrimp on individual plates (removing from skewers if preferred) and garnish with orange slices.
