Shrimp De Jonghe
3 lbs. cooked shrimp
1 large clove garlic
3/4 cup butter
1 tsp. salt
pinch tarragon
pinch marjoram
1 cup fine, dry breadcrumbs
1/2 cup dry sherry
Chopped fresh parsley
Mash garlic until almost a paste (or use a garlic press), then add to butter with salt, tarragon and marjoram.
Cream until well blended, then add breadcrumbs and sherry.
In a buttered baking dish place alternate layers of shrimp and crumbs, sprinkle parsley over each layer ending with crumbs.
Bake in 400' oven for 20-25 minutes and serve immediately.
Serves 6.
