Grilled Prawns with Papaya Salsa

18 jumbo prawns, peeled (except for the tail) and deveined
1/4 cup vegetable oil
Juice of 1 lime
1/4 cup fresh cilantro, chopped
4 scallions, coarsely chopped (include some of the green)
3 small avocados, peeled, pitted and thinly sliced


Place prawns in glass bowl. Whisk together oil, lime juice, cilantro and green onions. Pour mixture over prawns. Cover and marinate 1 hour at room temperature.

Grill prawns until opaque, about 2 minutes each side. To serve, fan out avocado slices on individual plates, add three prawns per plate, and garnish with papaya salsa. Serves 6


Papaya Salsa:
1 medium papaya, peeled, seeded and finely diced
1 medium red bell pepper, finely diced
6 scallions, diced
1/4 cup fresh cilantro, chopped
2 small jalapenos, seeded and minced
Juice of 2 limes
1/2 teaspoon kosher salt


Combine ingredients in bowl and toss to mix.
