Shrimp Scampi Recipes by Angel
Scampi Portofino
2 oz. clarified butter
10 large scampi, peeled and deveined
1/2 cup chopped green onions
1/2 cup sliced fresh mushroom
1/2 cup diced fresh tomatoes
1/2 teaspoon chopped garlic
1 cup heavy whipping cream
2 oz. brandy
1/2 oz. lemon juice
Salt to taste
Fresh tarragon leaves to taste
Hot cooked rice or noodles
Heat butter in saute pan; add scampi, brown and turn.
Add onions, mushrooms, tomatoes and garlic.
Cook until soft (about 5 minutes).
Add cream and brandy.
Simmer 10 minutes.
Season to taste with lemon juice, salt and tarragon leaves.
Serve while hot over rice and noodles.
Wine Scampi
2 Tablespoons butter
1 clove garlic -- finely chopped
3 Tablespoons dry white wine
1 lb. raw shrimp or scampi
Fresh parsley if desired
Place butter, garlic and wine in 1 1/2 quart glass casserole. Microwave for 2 minutes on High.
Stir in shrimp and continue cooking for about 4 or 5 minutes on High or until shrimp turns pink.
Let stand 5 minutes before serving.
Garnish with snipped parsley if desired. Serves 2.
Shrimp Scampi and Linguini
10 small to medium shrimp
3 Tablespoons butter, divided
1 tesspoon salt
1 teaspoon pepper
1 cup linguini
1/2 cup shrimp seafood sauce or prepared Italian red sauce
1/4 cup white wine
Saute shrimp in 2 tablespoons butter, sprinkle with pepper.
Add 1/2 cup seafood sauce or red sauce.
Allow to simmer 1 minute then add 1/4 cup white wine and set aside.
Simmer desirable portion of linguini noodles preferably 1 cup in 1 cup hot water and remaining 1 tablespoon of butter.
Add salt and pepper to taste.
Place linguini on plates.
Put Shrimp Scampi on top.
Serves 2.
