Sesame Asparagus and Shrimp
1 tablespoon sesame seeds
1-1/2 pounds fresh asparagus
1/4 cup vegetable oil
1 medium onion, sliced
1-1/2 pound large shrimp, shelled and deveined
4 teaspoons soy sauce
1 teaspoon salt
Toast sesame seeds in 350° oven 5 to 8 minutes; set aside. Wash and trim asparagus; cut into 2-inch pieces.
Heat oil in large skillet or wok at medium-high heat. Stir-fry the asparagus, onions, and shrimp in the hot oil until shrimp are pink and vegetables crisp-tender, about 5 minutes. Stir in sesame seeds, soy sauce and salt. Serve over hot cooked rice.
Makes 6 servings
