Savoring the Seasons Riverside, it's the New Bern, NC cookbook.
1 (10 oz) pkg. fresh cheese tortellini
1/3 cup butter
1 lb. fresh deveined, peeled shrimp
1 shallot, minced
2 tablespoons chopped fresh basil, or 2 teaspoons dried basil
1/2 cup grated Parmesan cheese
Cook the tortellini according to the package directions. Drain and set aside.
Melt the butter in a large skillet over the medium-high heat. Add the shrimp, shallot and basil. Cook for 5 minutes or until the shrimp turn pink, stirring constantly, Add the tortellini and Parmesan cheese. Toss gently. Garnish with additional fresh basil leaves.
