Shrimp Toast

12 fresh uncooked large shrimp
1 egg
2 1/2 tbs cornstarch
1/4 tsp salt
pinch pepper
3 slices sandwich bread
1 hard cooked egg yolk
1 slice cooked ham ( about 1 oz)
1 green onion
2 c vegetable oil


Remove shells from shrimp, leaving tails intact. Remove back veins from shrimp. Cut down back of shrimp with sharp knife. Gently press shrimp with fingers to flatten

Beat 1 egg, cornstarch, salt, pepper with fork in small bowl until blended. Add shrimp to egg mixture and toss until shrimp are completely coated.

Remove crusts from bread. cut each slice into quarters. Place one shrimp cut side down on each bread piece. Gently press shrimp to adhere to bread. Brush or rub small amount of egg mixture over each shrimp.

Cut egg yolk and ham intoo 1/2 inch pieces. Finely chop onion. Place one piece each of egg yolk and ham and a scant 1/4 tsp chopped onion on each shrimp.

Heat oil in wok over medium high heat until temp reaches 375. Fry 3 or 4 shrimp pieces at a time in the oil, for about 1 or 2 min on each side. Drain on paper towels.

Here are some sauces to try,

Garlic Soy Sauce:
3 tbs soy sauce
1 1/2 tbs distilled white vinegar
1/4 tsp minced garlic
1/8 tsp sugar


Mix all together.



Sweet and Sour Dipping Sauce:
2 tbs brown sugar
2 tsp cornstarch
1/4 tsp salt
1/3 c catsup
2 tbs white vinegar
1 tbs rice wine
1 tbs soy sauce


Mix sugar, cornstarch and salt in a small pan . Add remaining ingredients until smooth. Heat over medium hig heat to boiling. Reduce heat to low and cook and stir until sauce thickens.



Plum Sauce:
Combine 1/4 c plum jam, 2 tbs stir fry sauce and 1/2 tsp white vinegar in saucepan and heat


Orange plum sauce:
Blend 1/2 c plum jam, 1/2 tsp grated orange peel, 1 garlic clove, minced, 2 tbs teriyaki sauce and 2 tbs orange juice and 1 tsp cornstach. Bring to boil and reduce heat and simmer a couple of min.
