Shrimp and Cheese Strudel

Cheese and Shrimp Strudel

1/2 of a 17 1/4 ounce package (1 sheet) frozen puff pastry thawed
1 1/2 cups shredded Swiss Cheese (6 ounces)
1/2 cup dairy sour cream
1/4 cup thinly sliced green onion
4 ounces cooked shrimp (1 cup), chopped or one 4 1/2 ounce can shrimp, rinsed, drained and chopped
1 egg beaten


Preheat oven to 400 degrees.

On lightly floured surface, roll thawed puff pastry to an 18 x 10 inch rectangle.

In a medium bowl, stir together Swiss Cheese, sour cream, green onion, shrimp and half of beaten egg (about 2 tablespoons).

Spread mixture lengthwise down half of rectangle. Using a pastry brush, brush edges of pastry with some of remaining beaten egg. Carefully fold dough over filling and seal edge with tines of a fork. Transfer strudel to an extra large baking sheet. Brush top and sides of strudel with remaining beaten egg.

Bake for 20 to 25 minutes or until golden. Remove from oven. Cool strudel for 20 minutes before slicing.

Makes 16 to 18 slices
