Grilled Swordfish with Citrus butter
1 Tbl. butter, softened
1 Tbl. olive oil
1 Tbl. lemon juice
1 Tbl. lime juice
1/4 tea. ground white pepper
1 1/4 pound swordfish, cut into 4 pieces
Combine butter, oil, juices and pepper. Place fish on a hot grill, spread about 1 tea. of citrus butter on each piece and grill for 3 minutes. Turn and spread with remaining butter and grill for 4 to 6 minutes more. Serve with lemon and lime wedges.
Variation: broil fish 4 inches from heat for 8 to 12 minutes.
