Trout with Mushrooms

1 oven proof dish
1 fry pan
1 dish to hold ingredients

For 2 people:
1-2 Trout depending on size
butter / oil to generously coat fry pan
Juice of 1 lemon
6 oz mushrooms, sliced
1/4 pint of cream
1 small onion
1 cup chopped parsley
Serve with rice

Turn oven on to 350 degrees to warm up, grease surface of oven-proof dish.

Heat enough oil/butter to coat frying pan generously, slice 6 oz mushrooms and gently cook in pan, then remove and keep to 1 side.

Now raise heat in pan, and brown trout on all sides rapidly, but do not cook through. Lift trout into greased oven proof dish, add 1/4 pt of cream, cover, then place in oven for 15-20 minutes, checking for doneness.

Meanwhile saute some chopped parsley and 1 small chopped onion in the pan till onion is translucent.
As trout is nearly cooked, squeeze juice of 1 lemon over mushrooms, add sauteed onion/parsley to that.

Once trout is cooked through, add mushrooms mixture to the dish to let warm through, then serve with rice.
