Albacore Fresh Tuna "Spanish Style"

1 1/2 lb. fresh albacore tuna steaks
1 tbs. Olive oil
1 onion, chopped
1 can chopped tomatoes (14 oz.)
1 cup dry red wine
2 cloves garlic chopped
2 bay leaves
2 tbs. fresh parsley
Salt and pepper to taste
1 cup water


In a saucepan add the olive oil and the tuna fish. Brown the fish on each side for 2 minutes.

Add the wine, chopped onion, garlic, laurel leaves, parsley and the chopped tomatoes. Add salt and pepper to taste and stir. Add the water and mix well. Bring to a boil, reduce to low heat and cook covered for 30 minutes.

Uncover the saucepan and let cook another 20 minutes on medium heat until the liquid has reduced to half. The sauce should be thick. If needed let cook longer.

Serve this dish with cooked "Basmati" or white rice of your choice (brown rice can be substituted).

Tip: You can add peeled uncooked potatoes (cut into cubes) to the dish and cook as indicated above.
